Ingredients:

  • 350 g brown round rice
  • 60 g white wine
  • 1.5 L vegetable broth
  • 1 shallot
  • 20 g olive oil
  • 30 g butter
  • 300 g strawberries
  • Salt

Preparation:

  1. Prepare and warm the vegetable broth.
  2. Wash and cut the strawberries.
  3. Finely chop the shallot.
  4. Heat the olive oil in a pot over low heat.
  5. Add the chopped shallot and fry for 5 minutes, stirring occasionally.
  6. Add the rice and roast for 3 minutes, stirring continuously.
  7. Add the white wine and let it evaporate completely.
  8. Gradually add the broth, allowing the liquid to be absorbed before adding more. Stir frequently to prevent sticking and burning.
  9. Cook the rice for 15-20 minutes, depending on your preferred texture.
  10. When the rice is nearly cooked, add salt if needed and the chopped strawberries.
  11. Continue stirring until the rice is fully cooked, then turn off the heat.
  12. Add the butter, stir, and serve the strawberry risotto hot.
